Scrambled Squirrel Eggs
29/05/05
Of course squirrels don’t lay eggs, so use plain old hen eggs.
Just use the drippin’s from frying the squirrel to cook the scrambled eggs.
If you saved the heads when you cleaned the squirrels the brains are just as good as the hog brains and eggs you had as a kid.
The more of the flour from the squirrel pieces that stays in the skillet during cooking, the better. Just mix it in with the scrambling.
You could do the same if you want your eggs fried instead of scrambled…. But, don’t ‘Fried Squirrel Eggs’ sound ridiculous?
